Description

The pulao has a rich aroma and flavourful. Lord Jaganath ( the Odiya deity believed to be the carnation of Lord Vishnu) is offered 56types of bhogs ( Prasad or offering ) Some of these bhogs are seasonal and some specifically made on different occasions. Of these, arna ( rice ) and Dal is a common offering . Again rice is prepared differently, some sweet and some spicy. Dal is prepared thick from tur Dal and sweetened using jaggery. Traditionally all the recipes are made in earthern pots hence very flavourful.I have tried my best to replicate the ethinicty

Ingredients

Serves : 4
  • 2 cups basmati rice


  • 100 gms black dal


  • 2 tbsp ghee


  • 5-6 piece gloves


  • 4-5 piece star aniseeds


  • 1 tsp black pepper


  • 10 nos chasew nuts


  • 10 nos raisin


  • 50 gms sugar/ jaggery


  • 1 tbsp ginger crushed


  • 100 gms for dal : tur dal


  • 1 tsp turmeric


  • 25 gms sugar/ jaggery

Directions

  • wash clean and soak for 2 hours
  • Wash , clean and soak rice for an hour .
  • Keep all the dry ingredients in plate .
  • Heat a heavy vessel .
  • Add gheee and all the dry ingredients except ginger .
  • Fry for a while ,then add crushed ginger .
  • Add rice and Dal mix well
  • Add water as required or 3 cups
  • Cover the lid ,cook in medium flame .
  • Cooked till the rice cooked properly.
  • Garnish with cashews .
  • For Dal :Take a pressure cooker . Add Dal , sugar and turmeric powder .
  • Add enough water to boil .
  • After three large whistle remove it .
  • Serve with pulao .
